Applesauce Gingerbread


Makes one 8 x 8 pan or doubled makes one 9 x 13 pan. Believe me, you will want to double this recipe.


6 Tblsp. shortening
1/3 c. sugar
1 egg
1/2 c. molasses
1 3/4 c. flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. ginger
1/4 tsp. salt
2/3 c. applesauce


Cream shortening and sugar together. Add egg and beat well. Add molasses. Add dry ingredients and applesauce and mix well.
Bake at 350 degrees for about 25-30 minutes.



To double:

3/4 cup shortening
2/3 cup sugar
2 eggs
1 cup molasses
3 1/2 cup flour
2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon ginger
1/2 teaspoon salt
1 1/3 cup applesauce


Best if served warm with a dollop of freshly whipped cream.
